Turn your over ripe bananas into these easy to make healthy pancakes that the whole family can enjoy!
Malimit na sa tuwing sasapit ang mga huling araw ng linggo ay may ilang piraso ng saging tayo na na-oover ripe. At syempre bilang household manager, ayaw na ayaw natin na may nasasayang. So here’s what I did with ours for the fam’s breakfast today:.
Ingredients:
Dry
1-1/2c flour
2-1/2t baking powder
3T sugar
2T ground chia seeds
1/2t salt
Wet:
1c milk
2 eggs
1/8c melted butter
2 med or 4 small ripe bananas
Toppings:
Roasted nuts
Honey or syrup
Instructions:
In a med bowl, mix all dry ingredients.
In a large mixing bowl, mash the bananas then mix the other wet ingredients.
Pour the dry ingredients to the wet ingredients.
Mix gently until well blended but do not overmix. It’s ok to have a few small lumps in the batter.
Heat a nonstick pan with small amount of oil. [I use pastry brush to spread out the oil on the entire pan.]
Measure 1/3 cup of the batter to make 1 piece of pancake.
When bubbles start to appear on the top surface of the pancake, turn over.
Cook until lightly browned.
Serve with some honey and roasted mixed nuts (or scrambled eggs).
